{Looking for a Fresh Summer Meal?}

Summer is here and it is time to have a chic get together with your closest pals! If you are looking for a fresh, delicious, and low-cal meal for a dinner party...I am here to the rescue! Last night, I made these delicious shrimp tacos with a delicious slaw and a fabulous cocktail. 


Shrimp Tacos w/ Citrus Slaw






Ingredients:
Large frozen shrimp - enough for 12 shrimp per person
McCormick's Caribbean Jerk Seasoning
Olive oil
Light sour cream
Cumin
Small corn tortillas
Avocado
3 cups of cabbage slaw
2 tbsp cilantro
3 tbsp light mayo
2 tbsp fresh lime juice
1 1/2 tsp sugar ( I use one packet of Splenda)
1 Jalapeno


Directions: Defrost your shrimp and marinate them in olive oil and the jerk seasoning. Next, make your slaw. Start with the wet ingredients adding your mayo and lime juice. Then add your sugar or Splenda and the cabbage slaw along with the Jalapenos. Mix it all together and there you have a delicious sweet citrus slaw! Next, in another bowl mix together light sour cream and cumin in a separate bowl. Put those bowls aside.


Pull out your skillet or grill pan and cook those little shrimps till they turn pink. Use your corn tortillas, I buy Mission corn tortillas, two is 80 calories! yum! Warm those up for a second then lay them flat, add a dab of the cumin and sour cream then put 4-6 shrimp on the tortilla. Top with slaw and slivers of avocado! There you have it! A low-cal shrimp taco that is sure to get any party going!

3 tbsp. white tequila
1/4 cup pink grapefruit juice
1/4 cup lemon-lime soda(or diet)
Strawberry
Salt


Carefully fill a salt-rimmed glass with ice, then pour in 3 tbsp. white tequila, 1/4 cup of pink grapefruit juice, and 1/4 cup lemon-lime soda. Garnish with a strawberry and enjoy!
